As the Orthodox Easter falls this year on the 27th of April, all the tourist places in Greece are going to "put their best clothes", practically, it is the beginning of the tourist season. For this reason, I believe, they will be boats to Paxoi, but I do not know about Corfu.Actually, Igoumenitsa is not far away from Parga and from there are plenty of boats to Corfu, every hour.
The weather could be "tricky".This part of Greece (the eastern part) is very famous for its rains, it is quite rainy! Provide for an umbrella! Bon voyage!

Trying to predict the weather can be difficult because of local on the day variations.
This information should be used as a guide only. Here is the average weather for Parga for this time of year. Enjoy your holiday. May High 71f / 22c Low 57f / 14c

I've been to the Ionians (which are on the western, not eastern side of Greece)many times in May and it's not unusual to see the odd spot of rain, but unless you're really unlucky you should see plenty of sun as well. There are several excursion boats from Parga doing Corfu and Paxos. I've heard that the trip on the Marco Polo is quite a good one.
