You could visit the cu chi tunnels near Ho Chi Minh (about an hours drive) its where the Viet Cong had an underground city under an american airbase during the war. Its an amazing network of tunnels (which you can go down)and learn about the schools, hospitals andfactories they had undergrond for years ,and no one knew they were there.
or, near Tay Ninh you could visit the Cao Dai temple. This is home to a unique religious sect who worship at 12.30 every day. Its a very colourful temple and the religion has an interesting history. See my tips for more details. The Mekong trip is good, but even better if you can get one where you can stay overnight in a village. Its less rushed and it gives you a chance to walk around the village and meet the locals.

Tai Ninh is 90km north of Ho Chi Minh.So probably about 2 hours
Here is a link for you http://en.wikipedia.org/wiki/Tay_Ninh The mekong delta would be another 2 or so hours

Hi Tour to Mekong Delta takes approx 2 hours to get there, same return. The tour we took had tour guide, good English, lunck, ferry ride etc etc. Good value at US $18 for the day. Pick up 7:30 am, back by 6pm.We went 6 weeks ago.
Good Luck, Mike

I will agree the Cu Chi Tunnels are a great choice! The Mekong is also nice for a day. Another option is the hydrofoil boat to Vung Tau beach.
