Hi again,
I'm returning to Dubai for a holiday I had back in 2004 but can't remember the details on my visa. I'm a British citizen, coming over for about 8 days mid April. I will be staying with a Russian family there (My girlfriends family, they have just moved in). Will I just be granted a Visit Visa when I arrive at the airport or should I do doing something else? You should contact the nearest UAE embassy to wherever you live for accurate and up-to-date information, but normally UK Citizens can obtain a free tourist visa on arrival, valid for 60 days. Assuming of course that you have no Israeli stamp in your passport....!
The nationality of the people you will be staying with is totally irrelevant when you are coming on holiday and not applying for a residential visa.

For british nationals you do not need to obtain visa in advance, you can get permission to enter country for 60 days. You will need to supply address of where you are staying at airport but it does not matter who you are staying with. Good luck and enjoy your trip.

As the others have said:
You automatically receive a 60-day visit visa upon arrival at the airport. (note that this is different for Russians, they have to apply for a visa.) Just make sure that: a) your passport is valid for minimum another 6 months. b) there is no stamp of a previous visit to Israel in your passport. Greetings from Dubai, Jess ('c',)
