If you've visited Venice peviously, then you probably already have a rough knowledge of the sstiere. It's hard to suggest what to do as you may well have done lots of things during previous visits.
As for dinner, it depends on whether you're looking for fine dining or authentic cuisine. If it's the latter then I suggest trying Osteria Do Farei on Dorsoduro. Ask for Stefano. There is a place on the Rio Terra San Leonardo where you can fill up with prosecco. I cannot remember the name of the place but I can give you the directions. From the train station walk along the Rio Terra Lista di Spagna(the main drag) and cross the 1st bridge(ponte di guglie), then keep walking. After about 20/30 yards you'll see a small enoteca, usually packed with locals. That's your place

Here you will find the address (and map) of a few "enoteca"s http://www.paginegialle.it/pg/cgi/pgsearch.cgi?btt
Under enoteca you may find from basic wine sellers, to trendy restaurants with degustation of wine, so.... For the restaurant, you may also try http://www.lazucca.it/ or http://www.ristoranteallamadonna.com/ Both usually good value for money. Ciao Francesco
