Does anyone have an idea of the best way to get from Carcassone in the south of France to Gijon in northern Spain.

Have a look at www.viamichelin.com. They seem to favour : Carcassonne - Toulouse across to Bayonne - Spanish border then Vitoria - Bilbao - Santander - Gijon. They give it at 868 kms.

Unfortunately there is no speedboat or ferry service between Carcassone and Gijon.

You can go by train, though it will take a long time with several changes.

Or you could fly to Madrid and get a train from there.

www.easyjet.com fly from Toulouse to Madrid. It's easy to get from Carcassonne to Toulouse by train.
