Depending on where on the Grand Canyon you are your looking at about 3 hours drive (for North of Flagstaff) or 5-6 hours (for near Vegas)
You could do the round trip from the flagstaff end in a day certainly - though it will be a long one.

From the South Rim, it will take you about 3.5 hours without stops to get to the junction for the road in north of Mexican Hat, but the Valley of the Gods Road loop will take you 2+ hours with stops. It's also a dirt road, but should be fine unless the weather's bad.
So, that's a long day of driving, but you can certainly do it.

We just did drove from the Grand Canyon to Monument Valley in late December. If you are coming from Grand Canyon Village on the south rim it's about a 3.5 hour drive to Monument Valley. If you left early in the morning and didn't mind driving back after dark you could do it in a day. But you will be rushed trying to fit Monument Valley and Valley of the Gods (we did both) in with a return to the Grand Canyon that night but it can be done. Monument Valley is a magical place. I would recommend staying overnight at Gouldings Lodge or in Mexican Hat, UT (We liked Mexican Hat much better than Kayenta, AZ but Kayenta is closer to the Grand Canyon) and driving back in the morning so you're not so rushed. BUT if you have to be back that night it can be done.

I assume you will be going to Monument Valley too. The other VT people were right on with their times. I have done it in a day, but you will be in the car for a bit - good scenery though!
If it's muddy, watchout so you don't get stuck in Monument Valley or Valley of the Gods. Those roads were in really bad shape. How long will you be there and what else will you be seeing? Mike
