For Christchurch:
Do the Mt Cavendish gondola, see the sign of the kiwi (just google it), do a hot air balloon ride over the Canterbury plains (with up up and away tours), see the Christchurch botanic gardens (Christchurch is known as the garden city and these gardens are really lovely), take a canoe down the Avon river, take a day trip on the railway to Arthur's Pass- a beautiful mountain range, take a day trip to beautiful akaroa and swim with the dolphin.... Or, take any hikes around- in Arthur's pass, the Banks peninsula track (see my page on it), there is so much to do in new zealand and Christchurch is a great base

Risking criticism for being impolite or not helpful I must really say that such questions totally turn me off the forum. Why do we write hundreds and thousands of tips, and why does Pam edit the NZ tips, if then such questions come up about places absolutely not off the beaten path? Two clicks on the destination search, and everything shows up. After having had a look at this you can ask specific questions.
Well, I am delighted to see that some members are at least willing to copy the same answers again and again as their replies... Should I copy my 200 tips about Christchurch to be helpful? Anyway... Have a nice trip!

Kaikoura is an awesome spot only a couple hours drive north of Christchurch.
