First things first ! The Evason is on the coast in Pranburi which is about 30 minutes south of Hua Hin. It is a quiet area, although there are a few local restaurants that have opened. Just outside the Evason facing the sea head right/south, you will see the nice Thai restaurant, food is very good and cheap, drinks are cheap too. You will also find local drivers that have cars and vans to take you to/from Hua Hin, although the Evason does have it's own shuttle service.
The area is relatively quiet, for shopping and a large choice of restaurants wou would need to head into Hua Hin itself. You can always get taxis back late at night but thinki in the B 300-500 range depending on negotiation. South of the Evason you can head into the Sam Roi Yot national Park. Same area is Dolphon Bay which has a few resorts and other accommodation. Dolphin Bay resort can arrange boat trips around Monkey island and if you are 'very lucky' you might be able to spot the Pink Dolphins, I do not know the time of year that they appear but at least you can take a boat trip and have lunch in the areas. if you plan to take a trip around the Sam Roi Yot National Park try and get another couple or so as the driver will charge by the vehicle, might be a little extra for others but in all will be far cheaper, try the same if going into town at night. For other sightseeing look under general Hua Hin sigtseeing trips. There are day trips to the River Kwai and also south to Bang Saphan and Koh Talu island for snorkeling. Hope that helps. Just remember it's Pranburi and not in Hua Hin itself.
