From their website:
MARCO POLO The Macro Polo Chinese Restaurant is famous for its authentic Shanghainese and Szechuan cuisines prepared to perfection by master Chinese chefs. Enjoy a dim sum lunch daily from 11.00 a.m. to 2.00 p.m. and dinner from 6.00 p.m. to 10.00 p.m. daily. Private dining rooms are available for private parties. http://www.agoda.com/asia/thailand/pattaya/montien_hotel.html Can't tell you if it is any good, my budget limit for food in Pattaya is around $3 or $4! I know that there are other places selling Chinese specialties or proclaiming to be "Chinese Restaurants," a Google search will give you a few more. Even the restaurant at Foodland and Tops offer Chinese dishes, as well as some food courts. G luck.

Wish you have Cantonese cousine restaurant at good level then Chrisantemsus palace in the Royal Cliff Grand is the right place . Quality comes at price, however, but the restauarnt is nice with food, service and ' emperors' setting.
There you will find except very traitional dishes, those from high end like abalon, fin shark soup(you should consider whether this is ethical to eat it), fine bird nest soup, goose nets etc. You easily recah 1,500 THB in bill, but if yoiu get aabalon of fin shark soup (800THb++) then you can get up to 3,000-4,000 THb per person.Restauarnt as far as I remember is off on Thursdays. This is one of thefinest Chinese restaurants I ' ve ever been ( others would be in Langham Hotel in Hong Kong and in Intercontinental in Phom Penh).

I liked the Montien but that was about 3 years ago.
THe rice bowl at the Marriott did a good dim sum (yum cha for Aussies). Something like 30% of all Thais are of Chinese decent so a lot of the restaurants cater for Chinese eating...... please...DON'T eat the shark fin soup...it's an eco-nightmare!!!!!
