1) I recommend the Borj Sud (South Tower) for a very panoramic view. Bring binoculars; you can see more than you can from the Merinides, but you are a little farther away.
Directions to Borj Sud: You can take a taxi or, if you are driving, go around the south side of the medina down a long hill from the roundabout at McDonalds, pass the turnoffs to Batha and to Bab Rcif, climb a long hill, and just as you get to the top of the slope and about even with the fortress above you, turn sharply right onto a very steep side street.
2) Another interesting viewpoint is any high rooftop near the center of the medina, since it is roughly bowl-shaped. I recommend the cafe on the roof of the Nejjarine (Woodworkers') Museum near Moulay Idriss.
Interesting parts of the medina? Wow! Where do you start? Everything between the Henna Souk and Place Seffarine is very interesting, and so is the slightly out-of-the-way tannery. Since you will be in Fes for a few days, if you want to do a lot of walking in the medina, consider buying "Fes: From Bab to Bab", which is a book with an excellent map of the medina and lots of self guided tours between various pairs of gates. You might even find it in English at the bookstore beside the central market.
If you don't want to walk a lot, maybe you could get someone to guide you from Bab Rcif to the Qissariya and the Place Nejjarine; that route is much shorter but much twistier than the Talaa Kbira that dives straight downhill from Bab Boujloud for about an hour.
