The two palaces Kyongbokkung and Chongbokkung, and It'aewon for shopping.

There are more - but as you want only three... ;-)

1. Seoul Tower
2. Gyeongbokgung (the royal palace)
3. CheongGyeCheon (the new stream across the city)

If you are looking for more ideas, my top three destinations would be Gyeongbokgung, '88 Olympic Park, and Bukhansan National Park. Of course the only way to really see Bukhansan is to hike, so you need to dedicate most of a day to see much of this great attraction!

Itaewon and Seoul Tower would also be high on my list, along with some of the cool parks along the river (such as Seonyudo and Yeouido Islands). I also really enjoyed Korean National Cemetery and Namhansanseong , both nice off-the-beaten-path locations.

Hi Echega.
Well, I would agree with Robert's first 2 choices.
Seoul Tower (Namsan Tower, nam meaing south, san meaning mountain, from chinese characters), definitely, because it will afford you a view of the entire city, which wends its way through the low mountains that dot the city.
Any of the palaces would be good to visit, but I'd stay with Robert's selection, being a main palace.
Cheongyecheong, ok, it's nice, renovated some, nothing spectacular, but ok.
Unless you are planning to try ethnic (in this case, meaning non-Korean), I'd give Itaewon a pass.
I find it a bit crass, and at night, it's just full of drunks and evangelists. If you are a large guy, the stuff won't fit you easily. Shoes, forget it. Clothes, unless you like hip-hop fashion, forget it. You're European. The clothes are already better there. Stick to the food and drink if you want to go to Itaewon. (I'll take flak for this, I know).
Also, Insadong (near Jongro 3-ga station, line 1), historical area, quite touristy, but interesting.
And Myeongdong, (line 4 subway station of the same name), many shops, restaurants, etc.
Enjoy your stay!

I agree with the last poster.. Itaewon is not a particularly pretty area and better shopping is to be had in Jongro, plus that's near to Gyeongbokgung palace... if you're looking to party there are some good clubs on the south side of the river in gangnam or in the university district of Hongik... Itaewon mostly had the military guys and a few scattered Russian prostitutes when I lived in the city...

Have a great trip!

What a pity that Itaewon has changed that much since my last visit. Well, 15 years ago LOL I absolutely loved it and went there on several visits, there was never a problem neither during the day nor at night.

Those postings in the forum are really great to see how things can change and where the new places to go are.
