The hotels mentioned above are right downtown Edmonton. You can also try the West Edmonton Mall's Fantasyland Hotel. Or, party central is usually on Whyte Avenue in July, a 1 mile stretch of street where the party rarely stops (just kidding). Nicer hotels include the Scona Hotel, and another new one I think is called The Meridien (I could be mistaken on that!). Try looking some up on Expedia.ca. If you have a car, there are lots of properties on Gateway Blvd. Bars can always be found around here--it all depends on what age crowd you are after as it varies a lot here, too.

Downtown and Whyte Avenue (just south of the river) are the most popular places if you want to be close to bars and restaurants. I can highly recommend The Meterra on Whyte Ave. It's a boutique hotel and it's only a few years old. I stayed there once just for a nice weekend and also on my wedding night. The only one negative is that it is right on Whyte Avenue, so you can hear some noise from the street (because it's a party street!). Their sister hotel is the Varscona and it is only a couple of blocks away. I've never stayed, but have heard good things.
Whyte Ave is a little better for bars because they are all on the same avenue within about a 10 block strip, with the main concentration of them within 5 blocks. Downtown also has quite a few good bars, but they are a little bit more spread out.
