Hi can anyone advise us on the best way to travel from Hanoi to Hong Kong,either Bus or train but preferably not foot.

Preferable: DSVN can issue you either through international MPT train tickets (see my ticket 101 home page) till GuangZhou via Nanning, GuiLin, Hengyang (that route is in the tariff).
The train to Beijing departs HaNoi at 18:30 every Tuesday and Friday, you have to take that train and de-train at either Nanning, GuiLin or HenYang. Ideally to save some money you can get the through fare till Guangzhou with the reservation ("green slip") till Nanning/Guilin/HenYang. Now, if not - you still can buy the first portion till either place. MPT ticket in fist class 4-bed cabin (1/4, "soft sleeper"): HaNoi -> NanNing is 46.12 Swiss Franc, arrival 7:00 HaNoi -> GuiLin is 72.96 Swiss Franc, arrival 14:58 HaNoi -> Heng Yang is 92 Swiss Franc, arrival 20:22 The rest is up to you where you would like to change trains towards Guangzhou: in Nanning, in GuiLin or in HenYang. Keep in mind, the arrival at the border in DongDang is at 22:40, at border in PingXiang at 1:41, here you change the trains because of different gauge (but in VN you get the through tickets). That means most people will be sufficiently tired in Nanning at 7:00, perhaps de-training in GuiLin at 14:58 is a better idea.

You will need a visa for China mainland if you enter it.
Another way is you fly Hanoi - Bangkok (or KL) - Macau on Air Asia then take a hydrofoil from Macau to Hong Kong.
