We will be in Bruges for one day only on a Sunday. Are most things open on Sundays or will it be a waste of time going?

No, it won't be a waste of time. Museums, places of interest and tourist shops are open on Sundays. However most of regular shops will be closed on Sundays.

If you are going after mid-March, don't forget the canal tours, which are actually a nice way to see parts of the town you wouldn't be able to otherwise...

chocolat stores are sure open and also the typical touristic shops but probably not the regular ones.
