How available are taxis at the pier on Grand Cayman Island? Can they take 5 people? Do they accept US dollars or credit cards? What is the fare from the cruise ship area to Boatswains Beach Park?

I don't remember any van cabs but, they may have some. Otherwise they are usually 3-4 passenger cabs. They will take US cash but the rate might be over bank rate about 1.22 to the USD.
The island is not very big so the rate should be pretty low.

Taxi rates are based on a maximum of three
riders. The minimum fee is CI $4 for the first
mile, CI $1.75 for each additional mile. Waiting
time is charged at CI 75¢ per minute.
Taxis can be found at most of the major hotels,
down alongside the cruise terminal in George
Town. They congregate beneath the shade
trees, waiting for fares.

Remember when the cruise ships come it there are long waiting queues especially if there are many cruise ships arriving at the same time. Georgetown is really small and it gets really crowded with hundreds of people arrivīng at the same time.
