I am a keen shopper and as such survey anything offered. When I was in Göreme recently, I didn't come across any maps.
Travel the way our fathers did, get to a place and ask people.
I once met a Burmese who knew all of Burma just by narrations. And he walked it through. He told me that those nomadic people didn't have maps, the just had narrations.
In Göreme, first of all, go to a guest house who knows the area. They will tell you. And draw a map. Then you will walk.
The first day walk up dove valley from Göreme to Uchisar, go to the house of memories, a kind of a cave restaurant with its owner crazy Beiran. You can cook your meal with him, if there are not many people, and he will describe you where to hike.
Hasan at the Canyon view Hotel will do the same.
Try to do Ilhara Valley close to Kayseri. take along a blanket so you can sleep en route.
