I'll be in Seville in January, driving from Malaga. I don't want to take the car into the centre. Is there somewhere I can park my car out of town - even in a town on the way - and catch a train into Seville centre ? I'll only be there for a couple of nights.

Yes. Park your car at Malaga and take the train to Seville.

I need the car to travel on fom Seville. So... does anyone have the local knowledge and is able to recommend a suitable town/railway station on the way ?

Where are you staying at in Sevilla? If you stay anywhere close to SE30, driving there would not be a problem and you could always use public transport to get into the city center. Most hotels offer parking, or at least can recommend a safe place to park.
