looking for recommendations for a cookout, also called boils? The ones where everything is boiled up and dumped out on a table for everyone to help themselves. We'll be in Lafayette in early Dec. Thanks

Crawfish Boil. They're popular all across Louisiana as well as many other places in the South, including East Texas. Lafayette is kind of the hub of Acadiana though, so you should be able to find something.
Crawfish season starts in December. Most of the festivals are around Lent, which is in May. There are restaurants everywhere, and certainly in Lafayette, that will simply boil crawfish and dump them out on your plate. It's easier on the cooks. hth
