I found the Smorrebord at the SAS hotel fantastic and open faced sandwiches at D'Angleterre really nice

the restaurants "kap horn" and "nyhavn 17" both do decent smorrebrod.
the are both located on the main strip in nyhavn.

Try "Ida Davidsen", it specializes in traditional open faced danish smørrebrød and is located near Nyhavn. (You might even meet the Crown Prince + wife there...) See www.idadavidsen.dk

ida davidsens restaurant is legendary, but also very very expensive.
