There is no "quick route"!
You could take the Chunnel or a cross channel ferry crossing and drive through France into Spain, then to Barcelona and take the ferry from there to Palma Mallorca.
Or P&O Porstmouth to Bilbao/ Britanny Ferries Plymouth to Santander and drive to Barcelona, then ferry to Palma Mallorca.
I suggest you look at a couple of good maps,obtain ferry schedules and prices for P&O and BF. (Sorry - google for Barcelona - Mallorca ferries - I am away from home & don't have details to hand; (Car + 2 pax about £230 last time).
Use www.via michelin.com to work out the route - driving directions give mileages and driving times.
For overnight hotel stops in France I recommend Logis-de-France, online booking with maps available to make your choices. French hotels tend to be dog friendly.
Look for at least a minimum of 2 "ears of corn" and 2* for comfort and quality at reasonable prices.
With a last stop in France near the Spanish border an o/n in Spain might not be necessary.
If you choose either of the long Spanish crossings (not cheap) I would stay in Paradors en route to Barcelona - but we qualify for the generous over 60's discount!
I hope this will give you something to work on but get back when you have made some basic decisions about the route, for more detailed recomendations.
