I think apart from hotels you are stuck with Saturday to Saturday. Many people have apartments and chalets they rent out - and the idea is the same. If you have only 1 place you rent out (like many of the chalet owners here), you must be strict about the changeover day or you lose money with unsold odd days left over. It's a simple equation. The time period you are searching for is 1. the single busiest period of the year and 2. the most expensive period of the year. Competition for finding a place is really high. Your choices are few. You can either find someone who will rent it to you from the 17th - 5th and make arrangements to meet you on an 'off day' to give you keys - and your party will just have to suck up the extra days charges, or you can find a hotel where you can book a suite of rooms near each other. Hotels are the only ones that do not have set changeover days.
But get cracking because the longer you wait, the less choice you will have. You will not find people willing to 'make deals' at this time of the year either (don't think you are doing them a favor by wanting to rent on odd days and leave 2 or 3 days at the end of the week that they then cannot sell to any other party) - the demand is very high for places during Christmas/New Year.
You have probably already seen http://www.holiday-rentals.co.uk and there is also http://www.chamonet.com which has an 'accomdations' section and there are loads of other apartment rental websites out there using Google.
