Usually by Thanksgiving there will be some snow on the ground. Still, here is plenty to do. You can go snowshoeing in Grand Teton or Yellowstone Parks either by yourselves or with a natural history tour. There is also dogsledding and snowmobiling available from various operators. The National Wildlife Art Museum is neat to see. And don't pass up a sleigh ride onto the National Elk Refuge. If there is snow on the ground, thousands of elk might have migrated to that area by then. Definitely an excursion to take!
Most of the town is closed on Thanksgiving Day but occasionally you will find a restaurant open to feed all the "lonely orphans" on that day. Pick up a local paper when you arrive. It has a daily calendar of events.
Jackson Hole is a beautiful place. Enjoy your visit!
