Hi, my wife and me want to go to Bretagne the first week of January 2008. We would like to stay at a cozy hotel/pension or B&B or a self-catering option in one of those old stone houses. Can anyone recommend a good accomodation ?

Yes, I can. For B&B, cottages and such, THE organisation is:
http://www.gites-de-france.com/gites/uk/bed_breakfasts I've spent some lovely nights in various Chambre d'Hote (B&B) around Bretagne, as well as in other parts of France. It can be at a farm, a town house, castle, country home, anything. Give the site a whirl, there are photo's of the places that offer B&B.

I'll second the Gites de France. We've used them often and they are terrific. There are B&Bs and Gites de Charme, both are really nice.
