I am on a tight schedule, and am trying to decide between 1 night (1 full day) or 2 nights (1.5 days). Thank you!

Or if you are staying in Florence, you can take an early SITA bus, the Rapido, and spend the day and return to Florence on the last bus out. Take the SITA bus from the bus station across from Santa Maria Novella train station and make sure you take the Rapido otherwise you will stop in every little town on the way.
