Jonny's recommendation is worth checking out. I just want to share my own opinions concerning your question. Cantho city is a much more relaxing than Hochiminh city (I was born in Cantho, lived and worked in Cantho for 29 years, just moved to Australia 2 years ago). It is greener so it is good to do some cycling around the city and then turning into countryside paths where you can see farmers growing their rice seedings or harvesting their crops. When I was still living there, I had some foreing friends (they worked in Cantho) and we sometimes took bikes out for a ride to countryside at weekends. It was enjoyable and relaxing. You will see the actual life of Cantho's farmers and see how curious but friendly they are (towards you, westerners with blue fair skin and brown hair lol. Now from my experience, I think it is quite possible to do it by a combination of bkie and boat. What you need to do is that when you arrive there (after having checked in a hotel, shower and then get out for a walk), look for the office of Cantho tourism (across Ninh Kieu park with the statue of Hochiminh). I know they did organise cycling tours to country side. Just have a chat with them and see what you will go from there. I think you will get what you want. Just tell them type of tour you want to do. Now with 10 year old daughter, please let them know she will be with you during the tour. Cantho city itself at night canbe busy in some main streets. Having said that, meandering around the city (as it is not too big) is reall a thing worth doing. Do not be surprised if local people try to talk and touch you as they are curious towards foreigners (particularly in the countryside, farmers do that more often). The distance between the city centre (where most tourists stay) to the Cairang floating market (my parents still live near there) is about 15 kms, not too far. However I recommend you to go there by boat and do the cycling tour seperatedly. You may be able to do both of them (ask the company'staff). It would be nice if you are invited by someone in the country side to visit there home and have meal with them. Take her to Cantho university for a look if you have time. Not far from the city centre. It is very green and for sure many students will try to make cinversations with you. There are ancient houses and temples to se around the city. The ancient houses are a bit towards countryside's direction (called nha co Binh Thuy). If you stay in Lang Du Lich My Khanh (a local resort in the country side) you definitely will have a chance to ride bikes in the countryside).
I really hope you will have a great time in Cantho and take photos of the city. I miss it so much.
