Can anyone suggest a couple of decent bars for this Monday & Tuesday night coming up, as I'm staying in Utrecht for 2 nights. Preferebly with locals as I prefer mingling people watching with the locals when I travel, rather than ex pat British!

just go to the area on and around Oude Gracht (that's a canal in the center of Utrecht). It's not a tourist season and Utrecht actually isn't one of the main touristic towns (though it is definitely a wonderful town!).
Anyway, plenty of places to drink and eat there.

As an occasional visitor to Utrecht, I like a pub crawl along Oude Gracht as previous answer - Winkel van Sinkel, Witte (White) Balloon, Belgie (Belgium), smaller unremarkable but local haunt type pubs. Stairway to Heaven maybe aa bit later on.
