My daughters and I are planning to visit Italy this summer. When I read a price for a hostel, is it per person or for a room that accomodates 3? example: website states 43.00 USD Is that per person? ..or for the room (like hotel pricing)?

Most hostels charge per person. Obviously, the price goes up when you're talking about a private room. Normally, in private rooms you MUST book all the beds in the room. So, if dorm-style accommodation is EUR 20 per person, it would be reasonable to expect that beds in a private room are EUR 43 per person. If you could show us a specific hotel website we could probably give you more info.
For example, on Hostels.com you can try to book a private, two-bed room for one person. They will charge you twice the posted price because you have to pay for both beds, even if you're only using one. When you start getting into private rooms in hostels, it often becomes cheaper to stay in a two- or even three-star hotel.
