Whether you need to book accommodation in advance depends on when you are visiting, to some extent. If you are coming in the high season, it would seem sensible. If you are doing a long-distance walk do you really want to spend time looking for accommodation at the end of the day? You may end up walking a lot further (or paying for phone calls/taxis etc). Accommodation convenient for your route will, of course, be the obvious choice for other walkers........I'd book ahead, personally.
As for Ben Nevis, this too depends on when you are visiting, and on the weather. It is feasible, but you need appropriate clothing (proper boots and waterproofs at least) and know what you are doing; every year the (volunteer) mountain rescue teams have to find people who have got lost/injured/wandered up in sandals etc. Our mountains and moorland may not be particularly high, but our changeable weather can make them very treacherous indeed (even in high summer).
