The main one in in Prato della Valle square at saturday morning.

and the food markets in Piazza della frutta & erbe is every day.. except sunday I believe.
I've been told these 2 markets together make up Italia's 2nd largest food market behind Bologna.

the markets are in the 3 main squares (dei Signori, della Frutta and delle Erbe), they are mainly food markets although the one in piazza dei Signori is entirely clothes. it's true they are every day but only in the morning-early afternoon. unless it's Christmas time, when they expand to other pedestrial areas (the whole city centre becomes a huge market) and are open all day (till 8 or 9 pm)
