Can anyone tell me if it's possible to hire a car in Trieste or Venice and drive to Croatia, ending up dropping the car back at Dubrovnik? Most sites i have tried appear not to allow pick up in Italy and return in Croatia.

Also - can anyone advise if driving in Croatia is easy and worth doing compared to just getting trains or buses?

Any car rental agency would add a considerable fee for such an arrangement. Bus service from Trieste to coastal Slovenia and Croatia is excellent. I recommend changing to a Croatian bus carrier as soon as possible after crossing the border.

OR take a bus to Croatia and then rent a car. Problem solved. Driving (I didn't drive, I was the passenger) was not fun, the roads aren't bad but the drivers are and you cannot possibly go for 1/2 mile in a straight line as they are all curves on cliffsides. Nevertheless, the car gave us alot of freedom to travel alot of the country and I would do it again.

how about Rovinj, Split, Dubrovnik, Hvar or Plitvice (country side)?

Well...to say that the bus connection between Trieste and former yugoslavia is excellent.... seem to me "tourist agency for dummies". In the whole day there is only a ride to Trieste and one from Trieste ...but not all days of the week...( sunday and monday resting days)
