before 5 min ago i knew only Tio Pepe, bur hen i've found the full list of Bodegas in Jerez...

can you tell me which is the best to visit to see the old barrels and which is possibly the LESS touristic?

We've been to Sandeman and Pedro Domeque - either of these will be just what you are looking for. Have a look at my Jerez tips for a little more information. And thank you for the link to the website - they have changed it since I wrote my tips, and I shall have to correct my pages.

The Sandeman website has been updated since I last looked.

Take a look at http://www.sandeman.com/ing/general.html and click on "Welcome to Sherry". There is quite a lot of information there about visits and times. I think our tour was about 45-50 minutes.
