i can answer about damascus part, you should visit omayad mosqe , azem palace, National museum , Tkia sulaymanaya, Hmedia bazar,

a dinner in Old damascus in one of the old restauratnts houses
a view from Qasion mantoun would be nice at the sun set,

if you start early you can visit Eble the go to apamea and sarjella but I think you'll need to leave St.simeon and ayn dara for the next day since it gets dark early in this time of the year so you only have 8 hours of day light.

It is not possible to do all the visits in one day since the sunset is about 4:30 !! these sites are ocated near the city of Hama. I reccomend you divid the visits to 2 days and sped one night in Hama. I also like to draw your attention that no local transporation link between all these sites!!! you have to rent a car with or without driver.

The Maara museum is marvelious! it is one of the best mosaic museums in the area.
