Booking accom in December and July Holidays is a nightmare. Most Japanese go on holiday these times of year and book hotels 6 months in advance. Towns close to Gotemba are Atami, Mishima and Numazu (south way). Gotmeba is a starting point for people going to Mt Fuji, but since it'S winter and Mt Fuji is closed I am suprised its still booked out. Saying that, there are basically no hotels in Gaotemba as I said its a starting point and not a staying point. I would try other towns surrounding it if you are keen to specifically stay in that area. If it were me I would find another town, as Gotemba is lifeless and I'm not a party girl. Most ryokans are not on the internet as well which is annoying. Sorry if i haven't been much help.
