My wife and I are arriving in Frankfurt mid April for a 2 week trip headed to Amsterdam and then to Copenhagen. We plan to get Eurail Pass for the majority of our inter-city travels but want to see lots along the way. My first idea was to stop in Koblenz for 2 days, one day being a day trip up and back on the Rhine and the other renting a car and exploring. I am looking for ideas and recommendations. We like B&Bs but have not seen any info on VT.

Why not. The Rhine Gorge is great and if you plan to go by boat one way (back towards Mainz is obviously a lot slower because of the strong current) you could well base yourself in Koblenz to get rid of the luggage in a hotel :) Since you want to stay in the area, Koblenz is also a good base as elsewhere the railway goes right through the smaller towns and villages, making it hard to sleep if in the "wrong" hotel. I strongly recommend a stop in the pretty small town of Bacharach in any case. You can catch a boat from Koblenz to it and take a train back. There are also hop on hop off tickets for both boats and trains.
If you stay in Koblenz, you can also discover the much lesser known Lahn valley which I haven't done myself yet but really want to, or of course the scenic Moselle valley and the wonderful town of Trier with its Roman heritage.

in addition to what Charlotta has suggested, renting a car would not be necessary for the valleys themselves, but it would enable you to see lots of great places such as Maria Laach Abbey near Koblenz and it would make you flexible. Driving in this area is a wonderful experience of its own and you can stop wherever you like. Perhaps you get a good deal for these 2 days, it would make sense as distances in the area are not that large but there's a lot to see. A car would come in handy there.

If you don´t mind backtracking south from Koblenz a bit during your Rhein River visit, could may want to consider the Schönburg Castle www.hotel-schoenburg.com/ in Oberwesel for a unique accommodation experience. Note, the vineyards in that area are on the north side of the river valley, so you´ll have to take a ferry or drive a distance to the next bridge in order to cross the Rhein.

BTW next to this castle there also is a very well-equipped Youth Hostel. I know because I once stayed there during a scholarship contest. I had a single room with en-suite shower and I think the hostel also offers double rooms. It certainly beats a lot of b&bs in terms of comfort and facilities, the Youth hostel movement is actually one reason why the b&b concept is not that popular in Germany.
