Hello, I´m wondering what the most common eurail connection city is for taking the train between Maastricht and locations further off afield in Europe?

From Maastricht I would head for Cologne via Aachen. The Rhine splits Western Europe and Cologne is a major North-South and East-West point. West gives access to France and Spain, East to Berlin for access to Eatern Europe whilst south takes you to Munich and access to Italy, Austria, Switzerland and the the Balkan States. Europe is a big place but Cologne is a good place to start from.

As there is no such thing as a "eurail" railway company/system there can be no such thing as a "eurail connection city"! Eurail is a website/company that sells tickets and passes covering the different national/regional railway companies that operate in Europe, which includes the Dutch national railway system, Nederlandse Spoorweg (there is no single European railway company although there are joint ventures like Eurostar).
If you are looking for a big railway transport hub, COLOGNE is certainly one of them - but to get there from Maastricht you may have to first take a train to LIEGE in Belgium (although you can also go via Heerlen and Aachen); and you would definitely have to go to Liège first if you were going to Paris or Luxembourg - from where trains go on to Strasbourg, Basel and down to Italy. You can also get from Maastricht to Berlin, say, via UTRECHT and DUISBURG or via AMSTERDAM, but if you wanted to go to London, you would have to go (via Liège) to BRUSSELS. So all depends on where exactly you want to go, I would advise you when consulting train timetables (e.g. http://www.b-rail.be/main/E/ which, like the German railways timetable, covers the whole of Europe) to enter Maastricht as your starting point and not just assume that you would first have to get to Cologne (Köln Hbf) or some other city, otherwise you may miss more convenient connections. You can just see Maastricht on this German railway map (to the left of Köln), which may help you to see possible connections more clearly before you start consulting timetables: http://www.alleuroperail.com/eurorailway-maps/germany-map.htm You can also replace the word germany in that url by the name of another European country.
