Queenstown, especially in December, will have plenty going on. I was there a couple of weeks ago midweek and the town was rocking of an evening.

Queenstown is the party capital of New Zealand, I don't think you'll have any problems finding things going on mid-week.
As the previous poster mentioned around Christmas it's really busy. I came back from a New Years party at a house there last year and going through the town there were huge ques(?) to get into the clubs and that was at 3am.
