Hi we are going to be in Santa Cruz in April unfortunately the day is easter sunday. I was just wondering if this means everywhere will be closed up. We are only here for the day. Also anyone any suggestions on must see activities.

Only one day and at Santa Cruz? You'll not see Tenerife, just a medium-size city. Apart from walking at the seside promendade and see the Auditorium there is nothing especial to do as far I remember. And yes I'm afraid that all will be closed except probably the touristy shops.
If you have any possibilty to visit the Teide volcano area, go for it. As your time is very limited, I think your only option is taking an organised tour.
