I drive past Agüimes several times a week, but still haven't been there. I heard they have a very nice Old Quarter in the city centre that can be worth checking out.
Good thing about this place is that it is in the middle of Las Palmas and the tourist resorts in the south. 30-45 min drive to each of the places.
Plus there are many other villages nearby that you can visit also. I recommend you to rent a car and drive a bit around on the island, if you have the chance.
There are some beaches in the area, and the best thing is that no tourist know about these beaches... ;) Only the locals go there. It's a bit windy in this part of the island, so it's perfect for surfing.
You can read more about the beaches here (in spanish):

Right next to the city is "Barranco de Guayadeque" - one of the most beautiful valleys on the island with many cavehouses. Absolutely worth a visit!
