I don't know of a steak restauant as such (more of an American thing) but i know that Clancy's (15-16 Princes Street, Phone: +353 (0)21 427-6097 ) are quite well know for having great steak. It is located right in the city centre and has a pub and newly opened nightclub also. The restaurant is normally busy so propably best to make reservations.
As for a trad gig i'm not sure but try http://www.whazon.com/cork/ for upcoming events in the city. Try the Corner House pub (021/450-0655), if they've none on, they'll recommend somewhere.
