I don't know where you're from, so I don't know what weather you're used to. Coming from the UK, I would say it's fine to tour Italy in January, especially since there won't be the Summer mobs. My personal opinion is that Capri would be the nicest place to stay, and in answer to one of your questions, it has direct ferry links to Naples, Positano, Sorrento, and I think Amalfi. You could do some easy day trips from Capri this way.

Don't listen to Davide. Salerno is a dumpy port city on the extreme far end of the Amalfi Coast. The best home base for exploring that area will be Sorrento. Sorrento is kind of mid-way between Naples and Amalfi. You can get to Naples by train (departures every 30 minutes) or get to Amalfi/Positano by bus. There isn't a lot of boat traffic in January, but you can DEFINITELY get to Capri by taking the train back to Naples and walking/bussing down to Beverello port. I don't think there's on-off boat service ever, and there is little regular boat service in January, but if you buy the 3-day Campania Arte Card (see my tips about Pompeii) it includes local transport for those three days.
