A friend (Senior, quiet non smoker) likes to go for a long stay in the Algarve, preferably around Faro. He is trying to find simple but clean and very reasonable accomodations not too far from the beach, for the time - around Dec.16 - Feb.16 (2 months). Hostels or private welcome, with or without breakfast. He speaks english only.

It might be worth looking on sagatravelshop.com which is for over 50s and might have some ideas. If you book a hotel on there it gives you 5% off the lastminute.com price when you get to the last page of the booking. The Vilamoura and Quarteira area seems quite popular with long-stays during winter, but it is all pretty quiet. Hope that is of a little help.
