We want to avoid the arranged excursion by our cruise liner and make our own way to Monaco from Villefranche. Can anybody provide exact details of buses/trains?

Well, you go to the station, buy your ticket and jump on the next train in the direction of Menton/Vintimille. For the schedule see www.ter-sncf.com, but the trains are so frequent during the day that planning isn't necessary. Just have a look for the return times, as in the evening the service isn't that frequent any more.
