If you're in Charlottetown, Victoria Park is a fun place. There is playground equipment, a supervised pool, open fields, an ice cream canteen, the woods, a skateboard park, and ball parks.
Also, Peake's Quay at the waterfront is a good place. The kids will enjoy the big tank filled with live lobsters and other small sea creatures (they can pick them up out of the tank too). There is also live music, a seafood restaurant, and shops.
Anne of Green Gables house in Cavendish is popular, and on some days they have skits and fun stuff for the children. When I worked there a few years ago, we'd have a Sunday picnic on Sunday afternoon with Anne and Diana entertaining the kids and the ladies of Avonlea making homemade ice cream for everyone.
There are some good beaches too, Brackley, Dalvay, and Cavendish are among the most popular for tourists.
