I don't know of any specific restaurants, though I find that I can eat vegetarian almost anywhere. And most restaurants are flexible, just ask for the stirfry, for instance, without the meat. They save money, you save yourself, it's a win win! It helps if your server speaks your language, though.
Also, as you are probably aware, some ethnic food lends itself easier to that style. And now a days, I find world cuisine in the most unusual places.

Most restaurant will serve a vegetarian platter. There are a coule of good places. In riffort village an Indian restaurant which seems to provide good veg. food. In suffisant a vegetarian restaurant recently opened cannot recall teh name though.

May seem a strange resource, but try the daily dishes of the Advent Ziekenhuis in Groot Davelaar, nearbyy Troepiaal Inn. This Adventists Hospital's kitchen serves nice vegetarian entries, soups, main dishes and desert, but also chicken and fish dishes. Mostly local greens, and for a good pricer too! Since I do not know a real vegetarian restaurant on the island, I always take my visiting guest to the Advent Ziekenhuis. Remember, it's no restaurant, it is a facility. You may stay and eat there (there are about 2 tables and 10 chairs) but most people just come and take along their orders. Don't feel uncomfortable! I recall having seen an ad of a new vegetarian restaurant that has just opened (this month, if i'm not mistaken), but cannot find the name nor adress. I will post it, once i found it.
