We arrive on Saturday at 8p.m., leave Tuesday at 11.30p.m. I an trying to find out if Le truck runs at either of those times?

you'll find truck at that time, not so many between 6pm till 6am, maybe you have to wait till an half hour if one just gone.
If you leave (take off) at 11:30pm I suggest to be at airport at least three hours before (maybe earlier). Check-in opens three hours before but there are always a line as controls are very very (did I already wrote very?) very meticulous (take it easy, don't get nervous, you're still in FP). I have to say I've never found so meticulous not even in USA. Better to be ahed of the line to wait less after. I suggest to have dinner at one roulotte there is outside the FAA airport. Cross the road and turn left, by a shoes shop there is a (CHEAP!) roulottes with really good meals.

I think it does but very limited. They do have buses called RTC which rotates more frequently or even better, you can call a taxi from your hotel
