We will be arriving in Cadiz via a cruise ship and want to go visit Sevilla during the day.

How far is the train station from the Cruise Ship docks - i.e., how long does it take to get there?

Secondly: how reliable are the RENFE trains running between Cadiz and Sevilla (Andalucia express)? We only have 10 hours in port. We can make it to Sevilla and back, but not if the trains don't run regularly or are typically delayed.

That should open at a map showing where the bus station is. if you zoom out - to the right is the dock/port where the boat moors. To the bottom right is the Estacion de FF.CC. The railway station. So both are within about 20 minutes stroll.
Trains are normally very reliable.
The bus station has several buses to Seville. Mainly run by COMES. www.tgcomes.es

At Seville, if you get a bus, the terminus / station is across the road from the rear of the Alcazar - it's here - centred on this map :

If going by train, and the train stops at SAN BERNARDO which is the stop (underground) immediately before SANTA JUSTA, then you can alight there. The station is just further along from this bus station located where this map is centred:

Either. You have the option. Trains are quite comfortable.
