My sister will be in florence in May and would like to visit Assisi. She has already rent a car for sunday and monday. Should she go to Assisi on monday? There will be certainly less tourists then, but will the restaurants, shops, museums, be open?

Certainly all the major sites will be open, the upper and lower churches of the Basilica di San Fracisco which is the main attraction is open every day- as are the other churches. There may be some restaurants that are closed, but you will definately find many open. There will probably be less tourists than on Sunday but by no means quiet- Assisi is one of those tourist driven cities that does'nt follow the "rules" (like closed restaraunts on monday) that many regular Italian cities follow.
