Quanzhou, which is a couple hours from XM was an important port and cultural center in ancient China. You may want to check it out as seven days in XM seems excessive, even if it is a beautiful place!

I agree, Xiamen is a rather small island. How about crossing the strait and going to Taiwan?

Jorgito_lindo, your idea is excellent, but sorry to say it's not possible. There is no direct flight or ferry between China mainland and Taiwan.

That's right, you can't cross from Xiamen to Taiwan, unless you plan to do it illegally... not recommended, anyway!
You might want to check out the famous Hakka tulou (roundhouses) at Hukeng (reached from Yongding, which in turn is reached from Longyan). Quanzhou and Chongwu (near Quanzhou) will also be good sites to visit.
