You can also get the ferry from Lerwick in the Shetlands, which is what we were supposed to have done last summer. However, a storm in the North Atlantic meant that our crossing was cancelled and we had to go by ferry back to Aberdeen and then fly to the Faroes from there.
Transport between the islands is pretty good, with direct buses from Torshavn connecting with the inter-island ferry services. Although we ended-up hiring a car because our revised travel arrangements mean we lost over a day of our planned stay. I would say that you probably need to stay for about a week if you want to see most of what the islands have to offer.
The Faroe Islands tourist board have a lot of good literature which they will send to you, including a very good free guide book and walking guides etc.
If you are lucky with the weather, the scenery is fantastic!
