Just an add-on for Macau:
There are two companies offering ferry services to/from Macau:
1. TurboJET (from Shun Tak Center in Sheung Wan, HK Island)
2. First Ferry (from TST China Ferry Terminal, Kowloon)
As mentioned above, ferries run 24 hrs and depart every 15 to 30 mins.!
As for HK's MTR (subway):
Personally, I believe that HK has the best and most efficient public transportation network that I have experienced so far. This includes the MTR, bus, tram and ferry services alike. Extremely easy to take (keyword: Octopus!), very frequent, clean and reliable... and from a European point of view, pretty inexpensive.
Also, I don't know how long you intend to stay in HK but seeing your intended itinerary with Macau and Shenzhen, I sure hope you give yourself enough time to explore HK's beauty before visiting any outside places. If you spend more than one week in HK, Macau is definitely worth a visit. If you have less than a week, personally, I think you won't even have enough time to visit a lot of places within HK so I wouldn't even think about going to Macau...
